On winter days there's nothing quite like a bowl of soup to warm you up. Sick days require soup, its the rule. Grandma's have been known to have their own soup recipes that work as a cure all for whatever is ailing from the common cold to a broken heart. I challenge you to ask any Grandma you know for their soup recipe. You are more then likely never going to get an actual recipe, instead you will be told to add a little of this and little of that. The final taste is how you know when its done. Simple right?
I am going to walk you through developing one of these amazing soup recipes. Lets see how I do, its a tall order.
First thing you need to decide on is a base. Tomatoey? Chicken? Vegetarian? Beef?
Good grab your base: crushed tomato, chicken stock, beef stock, veggie stock.
Next up veggies! So, veggies can be very specific to the soup however, the basics for most soups include onions and garlic. Celery and carrots are usually in most soups. After that the choice is your, this is where you get to get creative. Clean out the fridge and use what you have around even canned or frozen veggies work.
For vegetable soup add broccoli, corn, peas, or green beans. Or add them all! Use vegetable, beef, or chicken stock along with a can of crushed tomatoes. Consider adding a can of beans like great northern, kidney, or cannelloni. Simply adding browned beef cubes turns regular vegetable soup into vegetable beef.
For chicken soup the trinity will serve you well: carrots, celery, and onions. Adding noodles, chicken broth, and chicken complete this simple favorite.
No matter which soup you make be sure to season it well with salt and pepper. Experiment with other spices as well and find what you like.
